Einkorn is said to be the oldest strain of grain that has been nearly unaltered from its first discovered form. It’s golden color and and buttery flavor is a delight. It’s softer gluten structure can be challenging for bread making. After many months of experimenting I have come up with a recipe that gets all the lovely rise while keeping the flavor of einkorn. Made with a home blend of flour containing 50% freshly milled whole wheat einkorn. This bread will soon be a family favorite.
